Make `yarn start` and `yarn start:admin` work and work cross-platform #298

I found documented in their npm package and on their github repo's barebones documentation that you can set GIT_REPO_DIRECTOR=exampleSite to get it to work on a directory.

Between that and cross-env this should "Just Work™" without any documentation now.

The admin panel doesn't seem to pull content from /exampleSite after this change:

Try now, it was missing a Y after I moved the env variable from a previous test. Ironic that the typo is also in my PR text.
