feat: Moved Python to `src/` Directory #10

Planning ahead for introducing a test/ directory, the Python application has been shuffled in to a separate src/ directory (as per TDS Python guidance).

The build.bat and build.sh files have been updated with the new pathing, too!

Being superseded by a PR that @GooseLF is raising - he's included the changes as part of the pre-commit and GitHub action stuff #MegaPR
