The 'latest' tag of cortex is old(version 2.1.3) #177

Because the 'latest' tag of the cortex image is old(version 2.1.3) it throws errors when trying to deploy the infrastructure using 'docker' or 'docker-compose' installation guide.

+1 The only other version is a release candidate 3.1.0-0.1RC1

However, We should have a non RC v3 for cortex to docker. https://hub.docker.com/r/thehiveproject/cortex/tags

EDIT: there now appears to be several versions, perhaps docker hub was having issues
