From what I understand, the demo is supposed to have an original track for at least the main menu. The first time I loaded the game there was no music at all, including in the music player menu. The two or three times I've started it since then, I've had the standard HOI4 music.
I am running Ubuntu 19.04 and an up-to-date version of HOI4. I do not have any mods enabled except for the TNO demo.
Edit: I have another bug that's possibly related: the first time I open the Q menu (the one for one's own country) after loading a save, I hear a different sound effect than what I'm used to, but it's cut off halfway through and from then on all sound effects are vanilla.
