Operating system name and version: Fedora 39 (GNOME 45)
CPU-X installation type: RPM (Fedora)

Do you mean you see yellow text on white background like this? Screenshot_fedora39

CPU-X does not change the whole GTK theme, the selector just changes some CSS properties to make text readable with GTK dark themes like that: Screenshot_fedora39_dark
