Had some scope creep:

[X] Rework bundling to use std::fs
[X] Remove the useless Matter inheritance
[X] Fix a few bugs caught with cppcheck (static analysis) and valgrind / address sanitizer
- Helper functions
- Log initialization

There are still a few of the cppcheck issues, and a weird transient failure of MatterTest (track elsewhere).
