This PR:

Uses drf-spectacular to auto-generate an OpenAPI 3.0 schema from our Views and Serialisers.
Adds swagger-ui
Adds a copy of the 360G schema converted from JSONSchema to OpenAPI 3.0, so that it can be incorporated to the API's overall schema
