Adds tests for stringifyDates and fix some cases where tests failed
Add stringifyDatesInPlace, write tests for that and use it in favor of stringifyDates
add a load testing framework using k6 along with pnpm start:bench to backend. Rebased on top of #129 , hence blocked by it.
