restructure models directory #54

The current models directory structure is not scalable.  We should think
about what models we are going to provide and put them in sensible
subfolders.  I would be happy to close this issue by simply moving the
opennlp models into a subfolder called opennlp.

We still need to hash out how models are going to be distributed and/or 
incorporated into individual project's resource folders.  But I think this can 
be done on a case-by-case basis for each project.  The complaint given here is 
largely resolved by the recent project restructuring.
