Migrate to mamba-org/setup-micromamba@v1 #554

mamba-org/provision-with-micromamba is deprecated (https://github.com/mamba-org/provision-with-micromamba/pull/122)

Conveniently, this newer GitHub Action allows us to drop the hacky workaround to manually activate the conda env in each step

CI passed. I don't have sufficient permission to merge this PR, so someone else will need to do it
