For Word and PDFs, the user's browser should do the preprocessing before sending the files along.

For PDFs, use PDF.js.
For Word and Google Docs, write instructions on exporting to PDF so that it can be parsed.
For code, just add a crap ton of file extensions.
For HTML extract all text content and any related links.
