Limitations from working with Docker through Multipass and not able to mount volumes as suggested by ElasticMQ docs (should be able to create queues on launch via config file).
Current workaround:
Queues are spun up via the invoker which creates them if they don't exist before listening for events
Proposed fix:
Set up the queues from within the setup using either SQS API or use a custom Dockerfile and generate the conf file through shell scripting in that
