Upgrade to use latest did-resolver, did-jwt and did-jwt-vc libraries #758

Notes:
This has already been attempted several times. The issue when trying to achieve this has been how to ensure that uint8arrays and multiformats libraries are correctly resolved in jest tests in the SDK and in the expo bundler, because both of these libraries do not provide an require export.
