Expand CI checks

There are many ways in which the CI could be expanded, but some of the highest-priority ways (based on issues that came up during TOP-22-006) may be:

• Include yield checks with systematics turned on (e.g. up/down yields)
• Include yield checks for a data samples (including yields for data-based background contributions)
