We should decide on the exact output formating that we want for the mock catalogues.

We definitely want to have version control. For the moment we are thinking fits tables.

The WAVES exec want to push really hard for people to start using parquet files. So in keeping with that I've created a new branch that writes the catalogues into parquet files and includes all the metadata. The next thing we need to do is decide which metadata we should keep.
