Explaining the viz #552

From an earlier issue https://github.com/UBC-DSCI/introduction-to-datascience/issues/251 (I think at the time it made sense to combine these into one v2 issue, but now that everything is v2 issues, I'm splitting out again):

Move the section on Explaining the Visualization to its own chapter and expand and elaborated upon more. Suggested by reviewer in #104

I'm generally against this now -- a big change for little benefit. Closing -- feel free to reopen if necessary
