I have started documentation for big picture (setup and run a course) using Jupyter book. You can see what it looks like here: https://ubc-dsci.github.io/rudaux/
It gets rendered with CI when we push to master. To edit it, you just need to edit the ipynb files in jupyterbook content. To add a new section to the book, you need to create a new .ipynb file there and then add it to jupyterbook/_toc.yml.
