Changes:

Update monitoring_client role
Update monitoring_server role
Add molecule scenarios for testing install_monitoring playbook

This has been tested by running the install_monitoring playbook with mirsg-linux as the monitoring server and ucl-test-xnat.cs.ucl.ac.uk as the client.

Apologies, @p-j-smith - I spotted a couple of other places where I hadn't updated to use the monitoring_host group.
