Update episode 3 to the terra package #22

The episode 3 is still using raster and rgdal package and not the newest terra package.

We need to update the episode to the newest functions from terra. The parameters and default behavior being different we need to be careful to make sure we keep the episode story intact while mentioning there is another way to do certain steps (e.e project will crop to extend automatically if you give a raster as second parameter).
