The updates in this PR include:

Excluding "0-11th grade" categories and "Other" race/eth categories from plotting
Combining the educational categories for "some college" and "associate's degree"

Additional edits may include updating plot visualization to more closely match shiny app form of DYNASIM-only output plots.
