We're based in Wales, so along with Cardiff, Swansea, Newport, and Machspace, Welsh would probably be useful for us, but we're also clearly biased! 🐉
Welsh seems like good place to start as it is one of the better known UK languages. Apps such as Stringlate (Help translating FOSS applications) - https://f-droid.org/app/io.github.lonamiwebs.stringlate should help to do it easy.
