Adding details to 'About this manual' #15

Updating the top level to remove mention of UK.

First stab at adding details of what a case study should and should not be.

@Axford appreciate your input on this section from a "Lessons learned" sort of PM aspect? Do you think that there are other / better ways of writing this section?

Overall - looks good and I'm happy to see it merged. In a future revision, and as general best practise, I'd like to see the average sentence length reduced and lists of things converted to bullets.

...and ref the specific question - nothing significant to add. Think the prompts for case studies are good ones. Might have some builds once we've seen a case study or two.
