Add gatsby-theme-theme-ui #615

Spin off everything Theme UI related from @undataforum/gatsby-theme-base into @undataforum/gatsby-theme-theme-ui. The goal is to move everything styling related into the new theme so it can be switched out for another styling approach, e.g. Tailwind CSS.
