Finish Documentation Setup #5

The documentation github page exists, but it lacks examples and proper pages

  1. Add getting started
  2. Talk about react-query and provide videos to it on why we should use it
  3. Setup reduced version of syntax highlighting
  4. add more examples and code blocks

Add documentation on how to use the proxy feature of vite.config.js for a little more realistic data instead of having to put all your files into your public directory.
