Many functions don't need elevation. Add in flexiblity so that those can be run directly on sp objects.

Related to this is an issue with lakeFetch. It won't accept NULLs for elev. tryting to do raster::res(NULL) somewhere and bombs. See email from Élise Roussel-Garneau about this.
