create interpolation methods summary #18

Let's collect together a summary of common spatio-temporal interpolation methods available in python, R, MATLAB, etc.

Please list any methods you know of in this g spreadsheet.

What "features" are important to track here?

@sebastiandig : can you provide a file of datapoints we want to try interpolating?

Given that I haven't found any interpolation methods with boundaries, we might consider bumping up a level of complexity into finite element analysis. In general it might be better to use a dedicated software for that but I did find these three FOSS python packages:
