Clarify simplification process

The watershed endpoint has an option to simplify, but it isn't actually used. Instead, the simplification is done on the client.

• [ ] Check if the simplify method is used anywhere
• [ ] If not, edit the code to remove that to avoid confusion
• [ ] When possible, remove the simplify option from the endpoints where it's not used
