After looking at the 'Airpi' shield I think the best thing to do is use that but put the different sensors on a separate board/ holder and mount that somewhere on the outside of the bag. This will mean Liam does not need to remove the Pi from his bag or do much or any setup

That was pretty much my thinking.
We want to record temperature, humidity, air pressure and need a Real Time Clock unit and a way to mount a GPS module that this also provides.
AirPi is a MET Office backed project by some school children https://www.tindie.com/products/tmhrtly/airpi-kit/ ( it can also do NO2 levels, CO levels, light levels and UV levels )
But there are other projects that could provide these.
