[Bugfix-144] Edit Mock-Data Being Used for Rides Section / Recent Activity Styling #144

\app\dashboardEmployee\rides\page.jsx -- is using the old mock data file with .json, edit the formatting so the rides section uses the updated data format and correctly uses the ( mockdata\mock-data-new.js) file

Edit the formatting of the Recent Activity section so it is easier to view with only necessary information Also edit the colors of each section to represent if the rides are completed or currently reserved

Recent Activity : Client Name Reserved or Completed Time / Volunteer Name
