Fixes #1

The sample post with diagrams causes jekyll to crash when compiling the markdown to html. Seems maybe mermaid isn't directly installed and the jekyll-diagrams dependency appears to no longer be maintained.

We may as well just remove the jekyll-diagrams dependency completely.
