Replace @project-serum/borsh with @coral-xyz/borsh #268

@project-serum/borsh one is no longer maintained, version we were using was 0.2.5 by armaniferrante who is now at Coral. Never got deprecated (long story).

Looks like coral's borsh is the best replacement 0 Armani is at Coral now, version scheme seems to be the same. coral-xyz/borsh

Also format some TS.
