chore(subgraph): Choose pools with a untracked USD thresholds #582

There are 2 main changes in this branch:

1) Allowing pools selection from the subgraph provider to includes pools with untrackedUsd thresholds 2) Flip the metrics to continue measuring the untracked vs tracked pools for continuing the analysis
