You are more than likely running into codestripping issues due to the ARFoundation types only being referenced in scenes that are not in your build (as they are omitted when assigned to an assetbundle).
If you use the Addressables package to build the bundles, I think they have a way of auto-generating a link.xml to preserve whatever type is used in the bundles
Alternatively, include this in a link.xml file in your assets folder:

Unity Bug Report Case 1293657
On the AR Foundation scenes that are part of a AssetBundles and are delivered On Demand or on Install Time, the AR cameras don't work.
In Build Settings, if you add one of these AR Scenes to the "Scenes in Build" and you Build and Run from the Google menu, these scene work with no problems, but if a scene is delivered through Google's Asset Delivery those scenes won't work.
The AR camera isn't tracking nor rendering.
