Requirement: generate mock student activity data (including outcomes, participation, grades, etc.) to populate testing and production instances of Canvas LMS

(from Cole:) Will explore existing solutions to see if anyone has addressed this before. If not, I'll initiate the prototype phase, starting with Canvas and potentially extending to other LMS platforms in the future.
