Cool idea!
Note that if we implement this, then the strategic use of a remaining castle is limited: you can't add to the castle unless the castle is within your own castle building range. So if the only gate up the walls is not there, you can't build a new one to get on the walls.
I am fearing the buildings are destroyed for a reason: maybe the AI remains alive (while the Lord is dead) and keeps controlling units and buildings. To prevent this, only walls, towers, gates, should remain standing I suppose. Or we could change the owner of all buildings to no-one or something.
You can just build a seige tower to get up the walls if the gate is gone. Generally in favour. I believe it might have been suggested before. I also like the idea of "taking over" enemy keep when you kill him, though there would be a tonne of complicated work to do that, especially if you include the eco side of things.

This has to be the one feature I desire the most.
Capturing the castle unharmed is always much more difficult than reducing it to ash with catapults or trebuchets from a safe distance. If the entire castle disappears once the lord is killed, anyways, why would you even bother with more risky approach?
I believe it would be technically easier to keep just walls, towers and gates (and perhaps the keep), and let all other buildings disappear as usual. Therefore, we wouldn't need to deal with the economy.
Depending on the map and the amount of players, it could provide certain strategical advantage - you could use the remaining towers and walls to protect the remote area where you wouldn't be able to build defences yourself. This would be especially useful near oasis and choke points.
And even if the castle was reduced to ash beforehand, the battlefield would just look cooler with the ruins.
Also bonus idea: if it was possible to replace the eco buildings with ruin assets, it might look even cooler. Althought this is probably needlessly complex.
Simple "do not remove walls, towers, and gates" should be the main goal.
Also, thinking of it, once the lord is killed, and his keep is removed, there is a monument built on its place. This monument belongs to the dead lord's player. You can attack it with meelee units. Therefore, technically, the player probably remains in the game somehow. It should be possible to retain ownership of the remaining buildings.
Another bonus point worth considering as nice-to-have: if there was reasonably simple way to define list of buildings to remain standing, I'd also consider keeping the fear factor structures (gardens, gallows etc), for the aesthetics. And also flags.
Do you want ownership of walls and gates and towers to change? Or stay with the dead lord? Fear factor structures need to stay with the dead lord I suppose, otherwise the conquering lord is going to be surprised about their popularity drop :)
I support the variant of not transfering the ownership. It seems to me like an unnecessary obstacle.
I have a suggestion: is it possible that KI castles remain standing after the death of the lord? Similar to the moat which also remains after the lords decease. i thought it would be worth it both visually and strategically. Even if only as ruins.
