Carry out EDA #26

@SamanthaStarling I had 5 mins at work so created a new branch we can use for EDA. The branch is linked to this issue 😄

@SamanthaStarling I have merged all of our work and created a Pull Request. I have initially assigned it to @admrply to review, but we can change that! You can still push work to the branch even though it is in PR, so please take a look and make sure I haven't missed anything significant.

@admrply we are currently using a sample of data created from 3 LOB files. Let us know how you have got on with streaming and storing the data in S3, and I'll happily create a branch to make the necessary changes to our initial EDA file.
