Adds an option to specify a CUSTOM_CLIENT_FETCHER, which is a function that returns the desired client for ClientConfig models. This allows Service.get_client to be called for OpenZaak

both, but I'll take care of that. Currently only the 1.0.x branch is relevant, as there's barely any development happening for 1.1 versions of APIs.
