How much of this will break if I try this? Would like to update some of the folder names, should I be running a meteor command to do that? For instance, "componets" should be "components" I assume. Semantic, but still a place that could be updated.

To answer you're question, as long as nothing INSIDE the files change, we can put them anywhere. However, several js files reverence multiple templates. And some html files contain several templates. So moving them from folder to folder may cause issues. BUT file and folder names can be changed without error.
