My guess is that the soul ring challenge was already completed at 2 stars before the game. When the game finished, the challenge completion increased to 3 stars and the awarded challenge EXP becomes the difference between the new and old challenge completion status. In this case, the player had already earned 375/500 of the total possible EXP from the challenge from a previous game and earned the remaining 125 EXP in the linked game.
