The situation has improved slightly: Now you can see the game menu and even click on "New game" for starting.
After starting the game seen beginning subtitles on black screen.
But it end on white screen with crash.
This looks to me to be Quartz related, some relevant lines from the new Proton log from @NTMan:

Game still crashes with whitescreen (or blackscreen when "d3d9.deferSurfaceCreation = True" is enabled) Both Proton 5.0-3 and 5.2-GE-2.
Haven't tried the start of the game again, but there is graphical issues when using my savegame: https://github.com/doitsujin/dxvk/issues/1574
EDIT: Issue seems to be Nvidia specific and has been resolved.
Proton 5.0-7 was released today, which includes DXVK v1.6.1, which in turn includes that little fix for the graphical issues. Except for the cutscenes crashing the games, it should work fine now. Haven't tried to just remove the cutscenes myself, but it feels like that would be gamebreaking anyways. They don't work on Proton-5.6-GE-2 as well. I even tried reencoding them.
Tested with vanilla Proton and latest ProtonGE. Tested with <Workaround removed by moderator>
+devenum+quartz on Arch Linux. Game now display cutscenes. Also, do install all gst-plugins, their libs and lib32 counterparts.
Edit: it appears to be only a media foundation issue. Neither devenum nor quartz is needed.
