Hello @hungrymonkey, this reads more a like a Steam client issue than an issue with SteamOS as a platform, so I've transferred this issue to the steam-for-linux issue tracker.

This is most likely a duplicate of #10461, but I'm going to tentatively leave this issue report open because the Steam Deck Client is acting as a host in your case instead of acting as the client.

No problem. I tried the steam -pipewire flag on Gnome Wayland. The experience seems to be more reliable, but steam has to request the DE for screen share permissions. Good luck fixing these bugs.

Hello @hungrymonkey, per "Fixed crashes when streaming to/from the Deck with Steam Remote Play." in the SteamOS 3.5.17 update, please update you Steam Deck and retest.
