For a few years now I have noticed an issue where Proton games will sometimes crash if the Steam Friends List is open and signed in. Happens after an hour or so usually.
My suspicions:
1: Steam friends list is stealing the audio device from proton/pipewire, then something bad happens, then boom.
2: Wayland?!? Gamescope? Tried both.
3: Something related to the fact that the friends list needs to be signed in, then signed out, and then finally signed in again, in order for any friends to be shown in the list. Beforehand, list is empty.
Good luck figuring it out lol, this stuff has always been broken, there is no good version you can revert to.
