Improve colors and dark mode

Background

Currently, the documentation site does not use similar colors to the main site, which results in the documentation site not working when the user has dark mode enabled or their screen brightness is low. This PR aims to improve this.

Gemfile and Gemfile.lock were added so we can test this locally using bundle exec jekyll serve.

Looks good, I agree the documentation should follow branding colors.
