This fixes the Gradle build and run tasks to once again function.

Fix bug with iOS app name.
Upgrade to Gradle 8.1.1.
Fix build errors with Module file, test name for Kotlin 1.7, java 1.8 version, Mockk no version for ios.
Ignore code under app-iOS/Pods.
