Isolate the `Utils` classes in a separate gem #17

The classes contained in the Utils module are not really part of the model and should have their dedicated gem instead of just a folder in the model gem.

After doing so, an alternative tto the draper gem, lighter, should be developed so that the application does not depend on that anymore.

After many thinking and post-poning this issue I close it for some reasons :

the gem is not that heavy, so separating the model layer and the utils classes would not increase the performances of the micro-services
the classes are all correctly auto-loaded, so the micro-services are not laoding useless classes, they load only what they use.
