I have found several NPCs out in the wild that will attack the PC on sight. What I have found is that, if I disarm them, then the fight is much easier for melee-based NPCs. They generally have a 'fighting' skill which is using their fist fighting, so they are still able to hit, but for much less than their weapon would have been able to do.
What I would suggest is that, as soon as they are able, they should be attempting to rearm with their weapon. Some checks should be put in place so that, if the item is no longer in their reach, then they are not able (like if the PC disarms and then steals the weapon for instance).
