[LIGHTNODE] As a user, i would like timestamps from the node output as ISO 8601 #2210

In the messages output an ISO 8601 timestamp would be helpful. The format is 2024-09-24T14:30:45

@taariq what messages are these specifically? Or do we want to prefix a timestamp to all output on the node?
