Prepare Video API for migration to DynamicEndpoint #497

This PR is mostly an internal tidy-up up of the Video API implementation and its tests. It's preparation for migrating to DynamicEndpoint as with all other APIs. The changes are:

Implement Jsonable and QueryParamsRequest for appropriate classes
Tidy up redundant wrapper classes
Remove redundant code as a result of the above
Migrate tests to use JUnit 5
Use RestEndpoint declaration in VideoClient
Bump Jackson version
