Refactor all `config/collector/*.yml` files. #29

The 000-doc.yml was cleaned a little and the rest of the files were re-generated with pg_exporter -c $orig --dry-run >$new.

TBD:

The 000-doc.yml should be moved to README.md within the config/collector folder and completely refactored to proper Markdown.

Hello @Vonng I tried to refactor the files, as I mentioned. Could you please review it? The next step I would like to do is to create README.md from the 000-doc.yml with proper MD syntax etc. and perhaps some minor typos and fixes. :slightly_smiling_face:
