Dark mode icons for projects #1142

Motivation

Some projects have a different icon for dark mode, so we

Tasks

[ ] Figure out what the dark mode icons are for each project
[ ] Set up SCSS classes for those icons
[ ] Update /projects
[ ] Update curation wizard
[ ] Look for any other places we need to switch between light and dark modes and update the list
